How to make Cattail Pollen Pancakes

You can find cattails growing in wet, marshy places (rivers, streams, lakes, swampy areas). Gather the pollen in summer, put a plastic bag over the cattail heads and shake, if the cattails are at the right stage of maturity lot's of fine yellow powder will fall into your bag.

Ingredients:
3/4 cup sifted cattail pollen-
3/4 cup flour-
1 teaspoon baking powder-
1/2 teaspoon salt-
1 tablespoon honey-
2 eggs-
1 tablespoon oil or melted butter-
1 cup milk-

Mix all ingredients until smooth.
Cook on a hot griddle until golden on both sides.
Serves 4.
