Spinach
Spinach is a nutritious dual-purpose vegetable that can be cooked or used
raw in salads.
-Planting: Preferring the cooler temperatures of spring or fall, spinach
seeds should be sown as soon as the soil is workable, ¾ of an inch deep,
in rows 15-18 inches apart. Seeds can be sown every 10 days until warm
weather arrives for a continuous crop. Spinach requires an ideal pH
between 6.0 and 6.5. If necessary, an acid soil may be sweetened by
applying agricultural lime 5 pounds per 100 square feet of soil.
-Growing: The plants need to be well supplied with water, and high
nitrogen soil or compost. When the seedling are 4 inches high, they should
be thinned to stand 3 inches apart.
-Harvesting: Outer leaves can be harvested as needed, or pulled entirely
if desired. The entire crop must be pulled as warm weather arrives, or the
spinach will become unusable.
